A Vegetarian Dish A Month – September 2024: Quick & Easy Veggie Linguine
Pasta.
I love a good pasta.
But can a good pasta be made without meat?!
Of course it can.
September 2024: Quick & Easy Veggie Linguine
For one of my vegetarian dishes for this challenge, I knew I had to do a pasta. Sticking with my usual theme of doing a dish that is simple, flexible, and easy to make, I went for a “quick & easy veggie linguine”.
The result was probably one of the best dishes I’ve made for this year’s New Years’ Resolution.

As usual, I’ll give you the quick and dirty version. Here are the ingredients I used, though you can use pretty much any vegetables you have found, which I REALLY loved about this dish:
- Linguine
- Zucchini
- Yellow bell pepper
- Spinach
- Garlic
- Red onion
- Mushrooms
- Olive oil
- Salt and pepper
- Nutritional yeast
- Garlic powder
The steps were really simple, if you’ve ever made a simple pasta, you probably already know the drill:
- Boil the pasta
- Chop up the veggies
- Get some oil, onions, and garlic in a hot pan
- Add veggies in order of cook time. (dense veggies first, leafy ones last)
- Add the drained pasta to the veggies and toss
- Season
As long as you can boil pasta and fry veggies without burning em, you can make this recipe!
The Verdict
As I mentioned before, this might just be one of the best new dishes I’ve made this year. Then again, I’m a pasta-fanatic so I may be biased.
The simple olive oil/onion/garlic combo is always a winner: add some fresh, local veggies to get a wholesome mix of vitamins, tastes, and textures in there, then the nutritional yeast adds a final punch of umami for a dish that is filling, healthy, and tastes amazing. Even the kids loved this one.
